The Pasta Shapes Glossary

Sunday June 6, 2004
Pasta comes in an astonishing variety of shapes and sizes, from the thinnest of strands, known as angel hair (capelli d'angelo) to flat hollow strands that bring bass strings to mind -- bucatini. And then there are the flat shapes, lasagna, tagliatelle, fettuccine, and so on, and the extruded shapes, penne, cavatelli, rigatoni, and much more. And the bits that go into soup! As I said, lots of variety, and I've added a number of new shapes (and recipes) to the pasta shapes gallery.
