Spring Means.. Asparagus!

Asparagi, or AsparagusWhen I drove home the other day from Vinitaly, the major Italian wine trade show, the many miles of orchards in the Pianura Padana were all in bloom, and very pretty. Spring is here, and I wasn't surprised to find turgid spears of asparagus on display in our greengrocer's. Some ideas:
  • Risotto agli Asparagi: Asparagus Risotto is sure proof that Spring has arrived! And good, too.
  • Asparagi alla Parmigiana: A Neapolitan recipe, actually -- Asparagus in a rich Parmigiano Cheese sauce with crumbled hard-boiled egg.
  • Tortino con gli Asparagi: A voluptuous asparagus sformato that's perfect as an antipasto or in a light (even romantic) meal.
