A belated Felice Berlingaccio, and what's Next?

Yesterday was Berlingaccio, the Thursday before Carnevale (Mardi Gras), and kids usually get out early from school to go out and make merry, throwing paper confetti about (what are called coriandoli in Italy, where confetti are candied almonds) and munching on what ever's traditional where they happen to be. We had cenci, fried dough dusted with powdered sugar -- simple, but once you start in on a plate of them it's very difficult to stop -- and Betty wanted to make frittelle, tasty rice fritters, but settled for a torta di riso (a sweet creamy rice pie) instead. Now we're eagerly awaiting Carnival, and though almost every city or town has a specialty, few can top Sicily's Cannoli, which become extraordinarily sensual if the ricotta cream filling is kept light and fluffy.
