CavolfioreAnd yes, this is something to get excited about. Cauliflower is rich in vitamin C, to help keep colds at bay, and rich in antioxidants, which are thought to prevent things much worse. It's also poor in both sodium and calories, which makes it perfect for balancing richer fare. If you really want to diet, steam it whole, break up the florets, and serve them seasoned with a little olive oil, a sprinkling of marine salt, and a little pepper.
