Another Quick Meal

In a hurry but don't feel like cooking up a bowl of pasta? There are all sorts of other options. For example, Scaloppine alla Mediterranea, cutlets with peppers and tomatoes, which will take about 20 minutes if you broil the peppers to blister their skins, or about 8 if you buy some broiled peppers from your deli. The wine? The rest of the bottle you opened to cook the cutlets will be quite nice, or a Falanghina, superb white from Campania. And on the side? A tossed salad, or perhaps a string bean salad, and crusty bread.
