Hot Where You Are? It Is In Tuscany, And That Means....

Refreshing dishes that can be cooked quickly. Tomatoes work remarkably well in this context, and so does Italian bread, which can be soaked though and drained without becoming a mush. Three tasty ideas:
  • Pappa al Pomodoro
    A zesty tomatoey porridge that kids of all ages will wolf down. It's only defect? People will become upset when the pot is empty.
  • Zuppa di Pane alla Gallurese
    A hearty, thick tomato-and-bread "soup" with an abundance of cheese. Fine eating!
  • Zuppa di Pane Alla Cagliaritana
    Richer than what they make in Gallura -- there's some milk involved -- and also baked. It's generally served warm, and is quite nice.
