How to Prepare Live Clams

ClamsEver looked at those bags of live clams on ice in the market, and wondered what to do with them? They're actually quite easy to prepare, and once you have prepared them they're very quick to cook too. In this case, I made spaghetti alle vongole, spaghetti with clam sauce.

And some more Lenten suggestions:
  • Low Fat Pea and Mint Soup:
    This low fat, high fiber pea and mint soup with chopped parsley makes a fragrant and flavorful spring lunch or appetizer. Serve hot or cold, depending on the weather, and top with a dollop of low fat or fat free sour cream and mint sprigs.
