Preparing for Easter can be an extremely time consuming task. However, one still has to eat. How about a veal piccata, a simple Milanese dish that is in some ways a lemony take on Rome's Saltimbocca. Serve it with some zesty sauteed spinach (even quicker if you start with frozen spinach), or a tossed salad, and a white wine, for example a Frascati from the Alban Hills.
