Carnevale, or Shrove Tuesday for those in the English speaking world, falls fairly late this year, on February 16th. But this doesn't mean preparations aren't already underway: In Viareggio and elsewhere people are readying the floats for the parades, while those who will be going to Venice are hard at work on their costumes. Hard work that begs sustenance, and while it is too soon perhaps to start baking lasagna (though you will find takers of you decide to), the holiday is also known for all sorts of quick treats. For example?
Cenci (or frappe, or chiacchere, depending upon where you are), strips of dough that are twisted, fried, and sugared, are quick and easy to make, as are frittelle, fritters that can be with rice or without. And then there are Puglia's Cartedatte, and if you want a little more, there's what one might call a pizza roll.
