Thinking about Fish...
I know we're not yet into Lent, and Valentine's Day is still a ways off, but I have a package of smoked salmon in the fridge and can't keep it out of my mind. When this happens, it's time to put it to good use. So we'll start with:
Pasta al Salmone Affumicato, pasta with smoked salmon. A recipe based on a recollection of a delightful dish enjoyed in a restaurant behind Rome's Pantheon. Followed by:
Salmone Agli Aromi. Yes, more salmon, this time salt-roasted, a technique that is very easy and results in perfectly cooked (not overly salty) meat or fish. Served with Spinaci Rifatti, recooked spinach. Spinach goes well with everything, and if you start with frozen spinach this is again very easy and quick to do. To Finish Up?
Fresh fruit is both healthy and tasty. I would go with oranges or clementines, to cleanse the palate and stimulate the digestion. Oh yes, and a wine. Vernaccia, and both Casale Falchini's Vigna a Solatio and Montenidoli's Vernaccia Fiore come to mind.
Buon Appetito!
