It's Orange Season!

Most definitely; the markets are full of all kinds of oranges now, and though my favorite way to enjoy them is at the end of a meal or as a snack, they can work very well as ingredients too. Desserts obviously come to mind, but you can also use them in savory dishes.

I want to answer Jane who wanted the recipe for the onion pie (Her aunt Mariettafrom Bari). My father was from Bari. I have a recipe for the onion pie we make for Christmas Eve. Two large pizza dough – one for bottom and one for the top. Saute approx. 2-3 lbs sweet onions sliced in a little bit of oil. Add a little bit of water to steam and cover. Saute/steam until onions are transparent. Drain but keep the drippings. Roll out your dough and place in a large pan that you would make a large pizza on. Put your dough in pan and place the onions leaving space on edge. Place bits of tomato (I used a can of diced tomatos drained) around on onions. Break up black olives and scatter. Sprinkle grated cheese (Locatelli Romano or Parmesan). Sprinkle oregano and salt and pepper. Cover with second large rolled out dough and seal edges. Using your fingers dip in onion drippings and spread on top of dough. Prick some slits on top of dough. Put in oven 400 F for around 40-45 minutes until golden light brown on top. Delicious. We only make this for Christmas Eve along with the seven fishes. Buon Natale!
