The economic news has gotten worse of late, with unemployment reaching record highs, especially among Italian youth, and inflation kicking in, thanks also to increased fuel taxes that have raised the cost of fuel to almost 2 Euros/liter -- that's close to 8 Euros/gallon, or more than 10 dollars, and since most merchandise in Italy is transported by truck, rising fuel costs result in all sorts of other increases as well.
Given the situation it's time to think of frugal, satisfying soups, of which Italy has a very long tradition. A couple of ideas:

- Acquacotta, or Cooked Water: Greens, eggs, cheese, and bread. Tasty, too.
- Minestra Povera di Farro, or Frugal Farro Soup: A recipe from the rugged mountains between Tuscany and Emilia Romagna.
- Cipollata: A (Sort of) Frugal Onion Soup
- Stracciatella: A simple egg drop soup.
