A Selection of Fish Based Pasta Sauces

Italian cooking is very difficult to pin down -- almost every city and town has its specialties, and there are regional trends too; the end result is a huge number of local cuisines rather than a single national cuisine. However, there are some dishes that you will find almost everywhere, and that are now standards among the many Italian communities scattered across the globe.

Red Clam Sauce
A slightly tomatoey clam sauce.

Scoglio Sauce
Scoglio means reef, and this sauce has all sorts of seafood -- clams, mussels, shrimp and more.

Smoked Salmon Sauce
A classic Valentine's day recipe that's great any time, but especially nice when entertaining that special someone.

Spaghetti with clams -- the quintessential quick-cooking summer dish. This version is without tomaotes.
