A Selection of Cream & Cheese Based Pasta Sauces

Italian cooking is very difficult to pin down -- almost every city and town has its specialties, and there are regional trends too; the end result is a huge number of local cuisines rather than a single national cuisine. However, there are some dishes that you will find almost everywhere, and that are now standards among the many Italian communities scattered across the globe.

Aglio e Olio Sauce
Pasta liberally seasoned with olive oil, garlic, and red pepper: The one dish almost all Italian men know how to make.

Alfredo Sauce
Alfredo, a Roman chef, became famous what is essentially a cream sauce, in part because he served it to VIPs with a solid gold fork. You'll also find a version with peas and shredded ham.

Butter and Cheese Sauce
There's a reason Italians say things are come il cacio su'maccheroni when in English we say "they're like ham and eggs."

Four Cheese Sauce
The classic four cheese sauce, and a variation too.

Golden Fettuccine, or Fettuccine Dorate
This is a variation on a very simple, very traditional pasta dish that's also very quick to make. Tasty, too!
