Maremma is a wild part of Tuscany; a recipe for a stew the charcoal burners made with what they could catch.

Stuffed Cabbage Leaves: Rambascìci
Though one might expect richer fare for Christmas Day, these stuffed cabbage leaves were one of the standard dishes among the Italians living in Dalmatia, perhaps because they were introduced by those who fought the Turks in the mountains.

Rich Ligurian stewed meat in tomato sauce; the meat is a second course, while much of the sauce goes over the pasta.

Similar to the above, with the addition of rosemary and other herbs.

Valdostan Fricassee: Fricandò Valdostano
Aosta's take on the French fricandeau, made with white wine up in the mountains. Perfect with Polenta.

Piemontese milk-fed veal in a delicate milk sauce.

Veal Provençale: Vitello alla Provenzale
Delicate veal stew with tomatoes.

Veal Stew with Porcini Mushrooms and Finely Sliced White Truffle: Bocconcini di Vitello Con Funghi Porcini e Lamelle di Tartufo Bianco
A rich, elegant stew that becomes something else when white truffles are added. Difficulty:

A classic, unusual market day dish from Piemonte.

Roman Style Tripe: Trippa alla Romana
The classic, simple tripe served in the Eternal City.

Stewed cow's foot, a historical curiosity but also a tasty recipe.

Tripe Bound with Egg: Trippa Legata Colle Uova
A light lemony egg sauce works quite well with tripe.

Tripe Olivetana Style: Trippa all'Olivitana
A Sicilian solution for tripe: stew it, and then bake it with cheese, eggplant and meat sauce. Fit for a feast!
