Though commonly associated with the Val d'Aosta, cheese fondue was imported to the valley from nearby Piemonte. But it's good in any case.

You might not think to fry a cheese that becomes stringy when hot, but with a crunchy breadcrumb coating it's delicious.

A classic; if made in a ring mold it's the perfect vehicle for presenting a stew (which goes into the well).

A cheese torte may sound simple, but can be exraordinary.

They're similar to soufflés, though not quite as airy, and are amazingly versatile, ranging from hearty comfort food to light vegetarian delights to tasty desserts.

Most meatballs are meat-based. These, instead, are made with cheese, and will work nicely in a quick lunch. They'll also make a nice antipasto or party food.

A savory cheesecake made with ricotta and farro.

An extraordinarily rich, potatoey, cheesy wonder that's perfect for the keeping the cold at bay.
