Many recipes call for peeled tomatoes because the skins can impart acidity, and can also look ugly in the finished dish.

Here's How:
- Bring a pot with a couple of quarts of water to a boil.
- In the meantime, wash your tomatoes and remove the stems, if present.
- Once the water is boiling, drop a tomato into it, count 3 seconds and remove the tomato with a slotted spoon.
- The skin should split and come off easily with light pressure from the fingers.
- If it doesn't, dunk it in the water for a second or two more.
- Repeat the process with the next tomato, and continue until all are peeled.
Tips:
- Don't leave the tomatoes in the water too long. You don't want to cook them.
