Clelia's Cookies!

Daughter Clelia just turned 2 1/2, and is in day care, at a fun place called Il Cielo Stellato, The Starry Sky. Yesterday she came home with a note that says,

Dear Mom,

I learned how to make some tasty cookies at school; here are the recipes so we can make them together at home!

Salmino:

  • 1 package Oro Saiwa cookies (500 g, or about a pound package; these are similar to graham crackers)
  • 8 dry cookies (whatever you prefer)
  • 4 tablespoons sugar
  • 3/4 cup (150 g) unsalted butter
  • 2 egg yolks
  • 2 tablespoons bitter cocoa powder

Whir the cookies in a blender and melt the butter. Lightly beat the yolks and combine all the ingredients in a bowl, mixing well. Turn the mixture out onto a sheet of aluminum foil and shape it into a sausage. Chill it well in the refrigerator to firm it up, and serve it sliced.

Note: If raw eggs are risky where you live, use commercially prepared yolks.

Biscotti

  • 3 1/3 cups (400 g) flour
  • 1 cup (200 g) unsalted butter
  • 3 egg yolks
  • 3/4 cup (150 g) sugar
  • 1 teaspoon vanilla extract
  • The grated zest of a lemon

Cream the butter, then combine all the ingredients, working them until you have a uniform dough. Shape it into a ball and chill it for a half hour in the refrigerator.

Preheat your oven to about 380 F (190 C). Roll the dough out and make cookies using the cutters of choice, and bake them for about 10 minutes.
