Tiramisu!

I enjoy your food forum. Here's a recipe for Tiramisu. This is the easiest, tastiest Tiramisu recipe I've found. When in season (in WI) sometimes I add a layer of sliced strawberries. Also, I substiture cream cheese for Mascarpone, which is cheaper and tastes better. I slightly modified this recipe from Cecconi's "Betty Crocker's Italian Cooking."

TIRAMI-SU: LIFT-ME-UP DESSERT

Ingredients:

  • 4 jumbo egg yolks , 1/2 cup sugar, 1/2 cup milk,
  • 16 ounces mascarpone cheese, (expensive)
  • substitute, 16 ounces ricotta,( or use 8 ounces ricotta,
  • 8 ounces cream cheese, or 16 ounces cream cheese )
  • 2 ounces semysweet chocolate grated, 2cups whipping (heavy)cream, 2 tablespoons cocoa, 1cup cold espressoor very strong
  • coffee, (or add 1 ounce coffee liquor) 1/4 cup light rum. (or brandy)
  • 22 or more lady fingers,(savoiardi)

Beat egg yolks and sugar in 2 quart saucepan, beat in milk untill sugar is disolved. Heat to boiling over medium heat, use double boiler, stirring constantly, reduce heat, boil for a minute. Cover and refrigerate until cold.

Mix egg milk mixture with cheese and grated chocolate, set aside (refrigerate).

Beat whipping cream and 2 tablespoons of cocoa in chilled bowl untill stiff, refrigerate.

Mix espresso(coffee liquor) rum or brandy.

Dip half savoiardi in coffee mixture, (do NOT soak) arrange in single layer in ungreased rectangular baking dish, (11 X 7 X 1.1/2) or use two glass pie plates

Spread half the cheese mixture over savoiardi. Spread half of the whipped cream over the cheese mixture. Repeat with remaining savoiardi, cheese mixture and whipped cream mixture. Sprinkle with cocoa, cover and refrigerate.

PS You can add vanilla extract when beating eggs and sugar(optional)
