Garlicky Fish and Meat Dishes

By , About.com Guide

Scampi alla Busara
Scampi from Friuli, done in a zesty tomato sauce atop the stove. Also, a quick, simple shrimp scampi.

Tunnu a Palirmitana
Grilled fresh tuna with garlic, rosemary and sage.

Baccalà All'Usanza dei Pescatori
Fried Baccalà with a zesty garlic-and-rosemary sauce.

Arrosto Morto con Aglio e Ramerino
Pot roast with Garlic & Rosemary: slightly more elaborate than some other pot roasts, and very nice with flavorful meats or game.

Garlicky Chicken
A simple roast chicken that is more delicate than you might expect, though you can power it up by peeling the garlic.

Coniglio in Umido
Rabbit, stewed with rosemary, garlic and tomato.

Fagioli all'Uccelletto con Salsicce
Tomatoey beans and sausages are an inspired combination, that's also nice if you crank up the garlic.

Arista al Latte
A wonderful, lemony way to prepare pork loin that can also be done ahead.

Porchetta
Roast pig (here a small one), an ideal picnic food and also quite good as part of a festive, though not tremendously elegant, meal. Larger pigs, roasted the same way, are sliced to stuff sandwiches in fairs.
