The words "Olive Press" conjure up a rather bucolic image of people squeezing olives, and the oil dripping out into a flask. The actual process is much more involved, and has changed tremendously with the development of modern machinery -- for the better, because now oxidation, which spoils the oil, is much less of a problem. But it does still start with climbing into the trees in November to hand-pick the olives...
In this case Adriano Martini, who has 150 trees in the town of Impruneta, not far from Florence.
