Yield: 4 servings boiled baccalà
- 1 1/2 pounds (700 g) soaked baccalà
- Lemon juice, olive oil, or mayonnaise to taste
Take 1 1/2 pounds (700 g) soaked baccalà (see instructions
if need be) and gently immerse it in rapidly boiling, unsalted water. Cook for five to eight minutes, drain, and serve with lemon juice, olive oil, or mayonnaise to taste.
A wine? White, and since baccalà is flavorful I might go with a Vernaccia di San Gimignano.
