Veal Cutlets with Peppers, or Costolette di Vitello coi Peperoni: This is Calabrian recipe, and ideally the peppers should have some bite. If need be, however, you can use sweet bell peppers instead. To serve 6 you'll need:

Ingredients:
- 6 veal cutlets
- 1/2 cup olive oil
- 1 1/4 pounds (600 g) peppers (not fiery, but with a healthy bite).
Preparation:
Begin by washing the peppers, then removing stems, seeds, and white ribs. Then dice them. Take a large pot, heat the oil, and brown the cutlets, turning them several times, then add the peppers and continue to cook until they're done too, stirring frequently.
