- 6 thick slices beef filet
- 1/2 cup unsalted butter
- 6 slices mozzarella (buffalo milk mozzarella, if possible)
- 1/2 ounce (15 g) white truffles, finely sliced (omit if need be)
- Bread crumbs
- A glass of white wine
- Salt and pepper
Melt some of the butter. Dredge the meat slices in the melted butter, then in the bread crumbs. Melt the remaining butter in a pan large enough for the meat to lie flat, and brown the slices on both sides. Sprinkle the wine over them, let it evaporate, and finish cooking the meat over a moderate flame.
Transfer the meat to a heated serving plate, season it with salt and pepper, dribble the pan juices over it, and serve.
