Vegetables: Bell Peppers

Bell peppers may be native to the Americas, but they have adapted very well to Italy.
Saucepot Bell Peppers - Peperoni in Padella
This is a Campanian bell pepper recipe, and is frankly rather lusty. Since bell peppers will flavor the oil they're cooked in, you should use a cup, and cook them in batches.
Marinated Bell Peppers - Peperoni in Brusco
Most marinated pepper recipes call for marinating in oil. This Piemontese marinated pepper recipe instead has you marinate the peppers in vinegar before serving them. A tasty antipasto!
Goria-Style Marinated Grilled Peppers - Peperoni alla Goria
This recipe for marinated bell peppers was developed by Italian food writer and historian Giovanni Goria, and has been quoted in a number of cookbooks, as well as appearing on the web in several places. In other words, it's good!
Italian Pickled Hot Pepper Recipe - Peperoncini Sotto Aceto
Pickled hot peppers are extremely versatile: if you've a strong stomach they can be a nice snack, they're a wonderful addition to a mixed antipasto, and they also are excellent at jazzing up bland foods, especially the boiled meats that are a byproduct of making broth. It's easy to pickle hot peppers at home, and if you do you can make them just the way you want, with none of the additions commercial producers make.
Canned Hot Pepper Recipe - Peperoncini Sott'Olio
Hot peppers packed in oil are a wonderful way to jazz up bland foods, including the boiled meats that are a byproduct of making broth in the winter. They're also excellent for adding zest to picnic foods, especially frise, and also yield hot oil, which can be rather nice.
Grilled Bell Peppers -- Peperoni alla Griglia
It is extremely easy to grill bell peppers, and few dishes are as satisfying on a hot summer day. Italians generally serve them cool or lightly chilled, and they work very well as an antipasto, or with grilled meats or fish. This is mild-flavored; should you prefer it hotter add some shredded fresh hot pepper to the seasonings. Though the peppers will be excellent the day they are made they will be better the next day, and you may want to make them ahead.
Stuffed Raw Peppers -- Peperoni Crudi Farciti
Stuffed Raw Peppers, or Peperoni Crudi Farciti: Most stuffed peppers are cooked, so these will be a pleasant alternative.
Peppers Stuffed with Rice and Baccalà -- Peperoni Ripieni al Riso e Baccalà
Peppers Stuffed with Rice and Baccalà, or Peperoni Ripieni al Riso e Baccalà: As of this writing it has become hot enough that hearty meat dishes will cause even the sternest individual to wilt, whereas vegetables will refresh and relieve. Here is a recipe for peppers stuffed with rice and baccalà. Though it does require turning on the oven, these peppers will be just as nice warm as they will be hot (better, perhaps).
Peppers Stuffed with Peppers and Cheese -- Peperoni Ripieni Al Peperone e Formaggio
Peppers Stuffed with Peppers and Cheese, Peperoni Ripieni Al Peperone e Formaggio: Paula writes, My father's stepmother was Italian and he said when he was a young boy, she used to make the best stuffed bell peppers with sliced boiled eggs, bread crumbs, and he thinks garlic, olive oil and grated cheese. His 75th birthday is coming up and I would love to be able to make them for him but I have not been able to find a recipe for this. Any help you could offer would be greatly appreciated.
Pepper Bavarian Cream, or Bavarese di Peperoni
Pepper Bavarian Cream, or Bavarese di Peperoni: A delicate, finely perfumed bavarese that will work nicely as a side dish throughout bell pepper season -- in other words, year-round if you're lucky enough to live in some of the warmer parts of the world.
A Rustic Peperonata -- Peperonata Rustica
A Rustic Peperonata, or Peperonata Rustica: Peperonata is stewed peppers, and there are innumerable variations on the theme. This particular one id from the Pianura della Versilia, the coastal plain north of Pisa.
Meatless Stuffed Peppers -- Peperoni Ripieni di Magro
The variations on the concept of stuffed peppers are seemingly endless. Here shredded cheese (Grana Padana or Parmigiano Reggiano) stars as the primary ingredient in the stuffing.
Neapolitan Stuffed Peppers -- Peperoni Imbottiti
This is a Neapolitan recipe, from Caròla Francesconi's La Cucina Napoletana. "Beware, it must be made right," she warns. "If the bread in the filling becomes a gritty paste, if the eggplant aren't well fried, if the peppers aren't thoroughly cooked, or if the ratio between container and filling is off, you'll end up with something soft, squishy, and inedible...
Stuffed Peppers -- Pipi Chjini
There are all sorts of recipes for stuffed bell peppers. This one is simple, with anchovies, capers, and cheese that add zest to crumbled bread.
Peppers Stuffed with Pasta -- Peperoni Imbottiti di Maccheroni
Though one normally thinks of pasta as a first course dish, it is an extremely versatile ingredient in its own right, for example in this stuffing for bell peppers. These are nice cold, and will be better the day after they're made.
Bell Pepper Rollups -- Involtini di Peperoni
This recipe for pepper rolls stuffed with ricotta and bacon is one of the few Italian recipes I've found that calls for bacon.
About Bell Peppers
The bell pepper may be native to the Americas, but it has adapted very well to Italy.
Hot Peppers Stuffed with Tuna: Peperoncini al Tonno
Tiny round hot peppers stuffed with tuna fish: They're addictive!
Pickled Bell Peppers: Peperoni Sotto Aceto

Peperonata With Almonds, Green Olives, and Lemony Crostini
"I love the marriage of green olives and almonds, and sometimes I sauté them together in olive oil for a snack to accompany aperitifs," says Erica De Mane.
Red Peppers Filled With Tuna, Black Olives, and Rosemary
"After years of cooking and eating many versions of stuffed peppers, I've decided I like them best without a lot of cheese or eggs in the stuffing," says Erica De Mane.
Spicy Stuffed Bell Peppers
This rice and beef filling has a number of interesting additions including raisins and walnuts, which bring to mind Sicilian cooking -- though it may well have little to do with the Island: it's provided by the US rice council.
