And to accompany the bollito? Tradition dictates a wide variety of vegetables, and Pietro brings a cart with all sorts of things. I settled on erbette, sautéed bitter greens, and cauliflower. They worked quite well with the meats.
And to drink? Sparkling water, and since we were in Verona, a Valpolicella Classico Superiore, one of the city's great wines. Very nice.
