Sauteed Sauerkraut Recipe - Crauti Come Contorno - Sauteed Sauerkraut Recipe

Sauerkraut takes quite well to being jazzed up, and here's an idea for jazzing up sauerkraut that goes quite well with roasts or boiled meats.

Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Ingredients:

  • 2 1/4 pounds (1 k) sauerkraut (home made or store-bought)
  • A ham bone, fresh or smoked
  • A bay leaf
  • 1/3 cup olive oil
  • An onion, minced
  • 1 heaping tablespoon flour
  • Salt and pepper to taste

Preparation:

Rinse the sauerkraut and put it in a pot with the bone and the bay leaf, adding cold water to cover. Bring the mixture to a simmer, and cook it for about a half hour, stirring occasionally and adding a little more liquid if necessary.

In the meantime, sauté the onion in the oil, and as soon as it wilts stir in the flour. Continue stirring the mixture until it browns.

Drain the sauerkraut, stir it into the flour and onion mixture, check seasoning, and serve.

Yield: 4-6 servings Sauteed Sauerkraut.
