These Pecorino Toscano Skewers are classic cocktail food, and the sort of thing that you can assemble as you see fit.

Ingredients:
- 1/2 pound (200 g) diced aged pecorino Toscano
- 1/2 pound (200 g) diced Tuscan salami
- 1/2 pound (200 g) of pitted sweet olives
Preparation:
Assemble 1/2 pound (200 g) diced aged pecorino Toscano, 1/2 pound (200 g) diced Tuscan salami, and 1/2 pound (200 g) of pitted sweet olives, and alternate everything on wooden skewers until all is used up. Then season the skewers to taste with salt, grated pecorino (if you want more of a good thing), and pepper, and they're ready.
This recipe is open to improvisation, you could also use halved cherry tomatoes and cubed mortadella, for example. Serve with Galestro, a simple, crisp Tuscan white wine.
