Creamed Chicken, or Pollo in Bianco: A simple creamy chicken that will be good as part of a light meal.

Ingredients:
- A young chicken (see below for quantities)
- Flour
- An onion
- Salt and pepper to taste
- Broth
- Cream
- Freshly grated nutmeg
Preparation:
Chop a young free-range chicken weighing about 2.2 pounds (1 k) and flour the pieces. Chop an onion and sauté it in a quarter cup of olive oil until it becomes translucent, then add the chicken, season everything with salt and white pepper to taste, and cook, turning the pieces, until browned on all sides. Add a few tablespoons of broth or warm water and continue cooking until the chicken is almost done (the meat will begin to pull up the bones of the drumsticks), then stir in a cup of fresh cream and dust everything lightly with nutmeg. Simmer to reduce the sauce, stirring constantly to keep anything from sticking, and serve piping hot.As a side dish, the green of choice sautéed in butter, or funghi (especially porcini) trifolati. As a wine, a Bianco di Cortona. If you cannot find it, use a white from Orvieto.
