This simple Piemontese buttered chestnut recipe will serve 6.

Ingredients:
- 1 1/8 pounds (500 g) dried chestnuts
- 4 tablespoons sugar
- 1/3 cup butter
- 1 scant teaspoon salt
Preparation:
Put the chestnuts, sugar, and salt in a pot and add cold water to cover. Bring the water to a boil and simmer the chestnuts for at least a half hour; the water should be almost completely evaporated.
Turn the chestnuts out into a bowl, season them with the butter, and serve them hot.
In the mountains, some add a few leaves of sage or a sprig of rosemary to the water. Discard the herb when you transfer the chestnuts to the bowl.
