Apple Cream with Ice Cream, or Crema di Mele con Gelato: Italian chefs are coming up with new ideas all the time. This apple cream with ice cream will be quite nice at the end of the meal, or in the evening. To serve 8:

Ingredients:
- 5 large Golden Delicious or similar apples
- 1 pint (500 ml) apple juice
- The juice of 2 lemons
- 1/2 cup sugar
- 2 star anises
- 1 teaspoon powdered cinnamon
- 2 ounces (50 g) chopped pistachio nuts
- The ice cream of choice (I'd go with a straight flavor along the lines of vanilla or coconut here, not a mix)
- A lemon, finely sliced
- A red apple, cored and finely sliced
Preparation:
Begin my peeling the golden apples, coring them, and slicing them. Put them in a non-stick pot, together with the lemon and apple juices, the star anise, and the sugar, and simmer the mixture over a gentle flame for about 40 minutes, stirring often. By the time they're done the apples should have a creamy texture. Remove them from the fire, fish out and discard the anise, and flavor them with the powdered cinnamon.
You can serve the apple cream either worm or cool; in any case, divvy it up into 8 fairly small bowls, and garnish each with a ball of ice cream, a dusting of pistachios, and the sliced apple or lemon, as your guests prefer.
