Spaghetti with Bottarga, or Spaghetti alla Bottarga: First of all, what is bottarga? Dried salted tuna or mullet roe, and, if it is of good quality, it's a great delicacy that many consider rather randy. Some of the best comes from Sardegna, snd it's a wonderful base for pasta sauce.

- 1 pound (400 g) spaghetti
- 2 ounces (50 g) bottarga
- 1/3 cup (80 ml) olive oil
Cook the pasta in salted water. While it's cooking, grate the bottarga into a bowl, add the oil, and stir until you obtain a paste. Drain the pasta and turn it into a large skillet; stir in the sauce and heat over a brisk flame for a few seconds -- no more, because cooking bottarga makes it bitter, something you don't want -- stirring the pasta about energetically. Turn it back into the bowl, serve, and enjoy!
