Penne Pasta Salad with Shrimp and Bell Peppers, or Penne con Gamberi e Peperoni: A simple, refreshing, seafood pasta dish. To serve 4 you'll need:

Ingredients:
- 1 pound (450 g) shrimp, peeled
- 6 tablespoons olive oil
- 1 tablespoon minced parsley
- A pinch each salt and hot pepper flakes
- A red and a yellow bell pepper, stemmed, seeded, and ribbed
- 1 tablespoon tomato paste
- 3/4 pound (320 g) penne
- Set pasta water to boil, and when it does, salt it and cook the pasta.
Preparation:
In the meantime, combine the shrimp with 2 tablespoons of oil, the parsley, a pinch of salt and one of crumbled red pepper, and mix well.
Blend the bell peppers with the tomato paste. Season the resulting cream to taste and simmer it in the remaining oil over a low flame for 10 minutes, then add the shrimp and cook five more. Cover and keep warm, but not too hot. When the pasta reaches the al dente stage of doneness, drain it well and stir the sauce into it. Serve warm, but not hot.
