Dentex Stuffed with Oranges, or Dentice Farcito all'Arancia: A simple, elegant recipe for roast fish with an unusual filling. Dentice, known in English as dentex, is one of the more delicate Mediterranean fish. Sea bream might work in its stead, or porgy. To serve 4 you'll need:
Prep Time: 1 hour, 20 minutes
Cook Time: 30 minutes
Ingredients:
- 2 cleaned dentex, each weighing about a pound (500 g)
- A minced mixture of parsley, olives and capers.
- 2 tablespoons bread crumbs
- 2 oranges
- Olive oil
- Salt
- Pepper
Preparation:
Grate the zest of the two oranges. Combine the zest, bread crumbs, and minced herbs. Season the mixture with salt and pepper to taste, stir in 2 tablespoons of olive oil, and the juice of half of one of the oranges.
Stuff the cavities of the fish with this mixture, lightly grease them with a little oil, cover them with foil, and refrigerate them.
Half an hour before you plan to cook them, remove them from the refrigerator, and make three slices in the side of each. Slip a slice of orange into each of the slices in the fish, and wrap the fish in sheets of oven paper, leaving a small whole in each packet.
Preheat your oven to 360 F (180 C) and roast the fish for 20-25 minutes.
