Yield: 4 servings breaded cod fillets
- 1 pound (500 g) cod fillets, either fresh or frozen
- Flour, seasoned with salt and pepper to taste
- An egg, beaten
- Bread crumbs
- 1/4 cup butter or olive oil
- Lemon wedges
- Sprigs of parsley as a garnish
Flour the fillets, dredge them in the beaten egg, and then in the bread crumbs. Meanwhile, heat the oil or butter in a pan. When the oil is hot, fry the fillets until they are golden brown, turning them once (about 6 minutes in all). Garnish the fillets with the parsley, and serve them with lemon wedges.
A wine? White, and a Soave might be nice, as might a simple Trebbiano.
