Fritto di Lesso alla Milanese, or Fried Boiled Meat, Milanese Style: One of the delights and drawbacks of making broth at home is the boiled meat one also gets from the process. While it is quite nice served as is with a variety of sauces and boiled vegetables, one can only do this so often before it becomes tiring. Here's a traditional Milanese option for reworking boiled beef. To serve 6:

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 3/4 pounds (800 g) boiled beef, cut into six slices
  • 2 eggs
  • Freshly grated Parmigiano Reggiano
  • Bread crumbs
  • 2/3 cup unsalted butter
  • Salt & freshly grated pepper.

Preparation:

Lightly beat the eggs, and add to them grated Parmigiano to taste, as well as salt and pepper. Dip the slices of meat in the egg mixture, cover them with bread crumbs, and fry them in the butter.

As a variation, you can dip and dredge them, then cook them slowly in the butter, and serve them over a bed of risotto in bianco (risotto cooked with broth and onion but no other ingredients) that's seasoned with melted butter. The wine? A Franciacorta Rosso would be nice, I think.

Yield: 6 servings fried boiled meat Milanese Style.
