Amaretto Ice Cream: A rich, rather decadent, and thoroughly nice gelato made from amaretti.
Prep Time: 60 minutes
Ingredients:
- 1 quart (1 liter) milk
- 1 cup less one tablespoon (200 g) sugar
- 1/4 pound (100 g) amaretti (almond macaroons)
- 6 yolks
- 1/2 teaspoon vanilla extract
- An ice cream machine
Preparation:
Grind the amaretti to a powder in a mortar and place them in a pot, adding the sugar, the yolks, and the vanilla. Mix and stir in the milk a little bit at a time. Set the mixture to thicken over the fire as you would for a cream (see instructions if need be), and then pour it into the ice cram machine and proceed according to the manufacturer's directions.
You will find this ice cream to be excellent; these ingredients will provide ample servings for eight people. Halving the recipe, you will have enough amaretto gelato to feed four to five.
