Fig ice cream, gelato di fichi, is a classic late summer delight. You'll need:

Prep Time: 1 hour

Cook Time: 20 minutes

Total Time: 1 hour, 20 minutes

Ingredients:

  • 14 ounces (350 g) perfectly ripe figs
  • 1/2 cup (125 ml) milk
  • 1/4 cup (50 g) sugar or 1 tablespoon honey
  • The juice of a lemon

Preparation:

Peel the figs and blend the fig pulp with the lemon juice. Combine the milk with the sugar or the honey, and stir the mixture into the figs. Turn the mixture into the ice cream maker and make the ice cream.

I just made this today with figs I picked yesterday. Very easy to prepare and get going in the ice cream maker. Only thing I had to tweak was the lemon juice. I must have had a big lemon as it was a bit too tangy and overwhelmed the sweetness of the figs. But I evened it out with a little more honey and a teaspoon of sugar. I definitely think the honey gives the gelato a better flavor.
