Ingredients:
- 4/5 cup (180 g) sugar
- 2 ounces (50 g) baking chocolate, grated
- 2 cups (500 ml) whipped cream
- 1 cup blanched peeled almonds, toasted and ground
- 2 eggs, separated, and two more yolks
- 1 teaspoon cocoa powder
- 2 cups (500 ml) milk
Preparation:
Heat the milk and dissolve the chocolate into it, then let it cool. Beat the yolks until they are fluffy pale yellow with the sugar, then beat in the cooled milk mixture and the ground almonds. Heat the cream over a double boiler, stirring constantly, until it thickens. Don't let it boil or it will curdle. Let the cream cool, then combine it with the whipped cream. Pour the mixture into the ice cream machine and make the ice cream.
