Cremolata is quite similar to a sherbet, though the fruit juice used to make it is unfiltered, and a cremolata therefore contains bits of fruit. By comparison with sherbet cremolata is more richly flavored, assuming the fruit was perfectly ripe to begin with. To serve 6-8:

Ingredients:
- 1 1/8 pounds (500 g) fresh raspberries
- 1/4 pound (100 g) wild strawberries
- The juice of a lemon
- The juice of 4 oranges
- 1 1/2 cups (300 g) sugar
- More wild berry fruit to serve with it.
Preparation:
Wash and dry the berries. Put the raspberries in a bowl and crush them with a fork, reducing them to a pulp. Stir in the sugar, citrus juice, and strawberries, mix well, and but everything into a mold. Chill it in the freezer for a couple of hours, stirring it about every now and again to keep it from freezing into a solid block.
Unmold it onto a serving dish and serve it with more fresh berry fruit.
Yield: 6-8 servings strawberry cremolata.
