Pasta with broccoli (or broccoli raab) is generally vegetarian, or close to it -- peasant food of the highest order, enjoyed by those who couldn't afford meat. Broccoli go well with sausages, however, and this is a little richer. To serve 4:

Cook Time: 20 minutes
Ingredients:
- 400 g (a little less than a pound) penne or similar short pasta shape
- 400 g (a little less than a pound broccoli florets
- 3 links of mild Italian sausage (you could also use 2 mild and 1 hot)
- 1/4 cup olive oil
Preparation:
Bring a pot of water to boil. Salt it, add the broccoli florets, and boil them for 3-5 minutes.
While they're cooking, take a second high-sided pot large enough to contain he cooked pasta, heat the olive oil into it, and crumble the sausages into it.
Remove the broccoli from the boiling water with strain or slotted spoon and transfer them to the sausage pot. Stir to mix everything together, and in the meantime add the pasta to the water the broccoli boiled in.
Cook the pasta until it is al dente, drain it, and turn it out into the broccoli pot. Stir to mix all together, and serve at once. The wine? Chianti would be nice.
