Ingredients:
- 1 pound (400 g) spaghetti
- 20 zucchini blossoms, sliced
- 8 anchovy filets, rinsed and boned
- 2 cloves garlic, minced
- Shredded hot pepper to taste
- 1/4 cup Olive Oil
- Salt & pepper to taste
Preparation:
Set pasta water to boil. Sauté the garlic, pepper and anchovies in a deep skillet, stirring all about until the anchovies fall apart and the garlic begins to brown. By now the pasta water should be boiling; salt it lightly and add the spaghetti. In the meantime add the sliced zucchini flowers to the anchovy mixture, together with a little boiling water from the pasta pot, and cook for a few minutes. Drain the pasta, transfer it to the skillet, toss to coat the strands, and serve.Yield: 4 servings spaghetti with zucchini blossoms.
