Spaghetti With Zucchini Blossoms Recipe - Spaghetti Annalisa

Come summer, zucchini are in bloom. This spaghetti with zucchini blossoms recipe is a perfect way to use them.

Prep Time: 20 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 pound (400 g) spaghetti
  • 20 zucchini blossoms, sliced
  • 8 anchovy filets, rinsed and boned
  • 2 cloves garlic, minced
  • Shredded hot pepper to taste
  • 1/4 cup Olive Oil
  • Salt & pepper to taste

Preparation:

Set pasta water to boil. Sauté the garlic, pepper and anchovies in a deep skillet, stirring all about until the anchovies fall apart and the garlic begins to brown. By now the pasta water should be boiling; salt it lightly and add the spaghetti. In the meantime add the sliced zucchini flowers to the anchovy mixture, together with a little boiling water from the pasta pot, and cook for a few minutes. Drain the pasta, transfer it to the skillet, toss to coat the strands, and serve.

Yield: 4 servings spaghetti with zucchini blossoms.
