Chilled Mint Soup, or Zuppa Fredda alla Menta: I associate mint with granite, Italian ices made by stirring fruit syrup into shaved ice. And a mint granita is tasty and refreshing, but it's not the only use for mint. This chilled mint soup recipe, which also features plain yogurt, is a modern Italian creation. To serve 4 you'll need:

Ingredients:
- 2 1/4 cups (600 ml) plain yogurt, well chilled
- 3 tablespoons freshly minced mint leaves
- A spring onion
- Salt and cayenne pepper
- An ample bowl, well chilled in the freezer
Preparation:
Finely mince the spring onion. Pour the yogurt into the bowl, stir the minced spring onion and mint into it, season the mixture with a pinch of salt and cayenne pepper to taste, and serve at once.
