Pureeing the Soup
Michela's Minestrone: Puree with a foodmill

Once you have removed a few beans, put the remainder of the soup through a food mill to puree it. Michela prefers the traditional hand-cranked implement, because blenders (either stand alone or immersion) whip air into the soup. Expect the pureed soup to be quite thick. Gently stir the reserved beans back into the soup.
