Stewed Rabbit Onegliese Style Recipe - Coniglio all'Onegliese

Rabbit is quite healthy, and if you go out in the country you'll see people gathering grass for the rabbits they keep in their hutch. What next? Here's a stewed rabbit recipe from Oneglia, in Liguria. To serve 4:

Prep Time: 35 minutes

Cook Time: 75 minutes

Ingredients:

  • A rabbit
  • 2 onions, a carrot, and a rib of celery, minced
  • 1 cup dry white wine
  • 4 ripe tomatoes
  • 1 cup flour
  • Olive oil
  • Salt & freshly ground pepper

Preparation:

Chop up the rabbit, wash the pieces, dry them, and flour them. Put them in a pot with the vegetables and a quarter cup of oil over a medium flame. When the onion begins to color add the wine and stir until it has evaporated. Add the tomatoes and cook a half hour more, adding a little water as need be if things start to dry out. Check seasoning and serve.

Yield: 4 servings Stewed Rabbit Onegliese style.
