Roast Lamb - L'Agnidde o' Furne

Roast Lamb, or L'Agnidde o' Furne: This is very simple, but very good, and is one of the classic elements of a Christmas Day meal in Altamura, a town in northwestern Puglia. For four people you'll need:

Prep Time: 15 minutes

Cook Time: 60 minutes

Ingredients:

  • 3 1/2 pounds (1.5 k) lamb, chopped into pieces
  • Salt

Preparation:

Preheat your oven to 450 F (225 C), put the pieces in an oven pan, and roast them until golden, salting them when they're done. This is it, simplicity in itself.

You might, however, want to baste them occasionally using a sprig of rosemary as a brush (you could also put a sprig of rosemary in the pan), and also drizzle them with olive oil before you put them in the oven. The cooking time will probably be about an hour; the meat will in any case be done when it is fork tender and no longer rare.
