Ingredients:
- 2 2/3 pounds (1.2 k) lamb, cut into pieces
- 1/3 cup olive oil
- 2-3 cloves garlic, minced
- 2-3 hot peppers, shredded
- 1 tablespoon freshly minced rosemary leaves
- Dry white wine
- Salt
Preparation:
Wash and pat the pieces of lamb dry, then rub them with the salt and put them in a broad high sided skillet; stir in the oil and the herbs and brown the meat, stirring it about often.When the meat is browned, sprinkle in a little white wine and simmer, adding more wine as necessary to keep things from drying out, until the meat is tender. Serve hot.
Yield: 6 servings spicy stewed lamb.
