Spicy Lamb - - Agnello all'Arrabbiata

Spicy Lamb, or Agnello all'Arrabbiata: Though the word arrabbiata means angry in general use, in cooking it usually means that the dish contains hot pepper. This particular recipe is from the Abruzzo, and will serve six:

Prep Time: 20 minutes

Cook Time: 40 minutes

Ingredients:

  • 2 2/3 pounds (1.2 k) lamb, cut into pieces
  • 1/3 cup olive oil
  • 2-3 cloves garlic, minced
  • 2-3 hot peppers, shredded
  • 1 tablespoon freshly minced rosemary leaves
  • Dry white wine
  • Salt

Preparation:

Wash and pat the pieces of lamb dry, then rub them with the salt and put them in a broad high sided skillet; stir in the oil and the herbs and brown the meat, stirring it about often.

When the meat is browned, sprinkle in a little white wine and simmer, adding more wine as necessary to keep things from drying out, until the meat is tender. Serve hot.
