Penne Pasta with Onion Sauce Recipe - Penne alla Cipolla

People generally associate pasta with tomatoes, but they're not absolutely necessary, as this penne with onion sauce recipe from Emilia Romagna shows. To serve 6:

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Ingredients:

  • 1 pound (400 g) penne
  • 1 pound (400 g) shredded onions
  • 4/5 cup unsalted butter
  • 2 tablespoons olive oil
  • A ladle of good beef broth
  • 1 cup dry white wine
  • Salt & pepper

Preparation:

Heat the butter and oil and sauté the onions; once they have wilted stir in the wine and cook until it evaporates, then add the broth, check seasoning, and simmer until done over a gentle flame. In the meantime, bring pasta water to a boil, salt it, and cook the penne. Drain the pasta, turn it out into a bowl, pour the sauce over it, and serve.

Yield: 6 servings penne with onion sauce.

I was very curious about this recipe, being so simple and I was swept off my feet!. It was absolutely delicious, it's amazing how a few ingredients can make such a rich, flavorful dish. Granted: you do have to like onions a lot, but if you do, oh please, try this recipe.
