Pipe are large elbow macaroni that have been pinched off at one end, and indeed do rather resemble pipes in shape (pipa is a pipe of the kind one smokes in Italian). They go quite nicely with hearty sauces, especially meat sauces made with ground meat. Practical things: they're about an inch (2.5 cm) long, a half-inch (1 cm) in diameter, and cook in about 10 minutes.

Possible substitutions: Penne or penne rigate, or pipette, which are smaller
