Chocolate Strudel, or Strucolo al Cioccolato: A strucolo is a Friulian strudel; in some cases they're wrapped in cloth and boiled, but here it's baked. The recipe will serve 6. You'll need:

Ingredients:
- 1/3 cup (70 g) sugar
- 3 eggs, separated
- 3 ounces (75 g) finely minced blanched peeled almonds
- 4 ounces (100 g) grated baking chocolate
- Sweet cocoa powder
Preparation:
Preheat your oven to 360 F (180 C).
Beat the yolks with the sugar until the mixture is pale frothy yellow. Beat the whites to stiff peaks and cold them in, then spread the mixture over the dough. Sprinkle the grated chocolate and the walnuts over all, then roll up the strudel, put it on a greased cookie sheet, and bake it for about 40 minutes.
When it has cooled, dust it with the cocoa powder and it's ready.
Yield: 6 servings chocolate strudel.
